(GROUND PORK DISH) GINILING NA BABOY

Giniling na baboy

 

This dish is very easy to make and relatively inexpensive. This  recipe can satisfy the whole family of 5 for either lunch or dinner if served with rice. For people watching their carbs, you can substitute lettuce instead of rice and make lettuce wrap for a meal instead. If we run out of rice, we also use flour tortillas for a wrap. Meat and vegetables are in there, so no rice, no lettuce, no tortillas? No problem. This dish has it all and it would taste great by itself!

I also like to serve this for breakfast if there is any leftovers. I just topped this with fried eggs and I would have a great meal in the beginning of the day!

Giniling na baboy

INGREDIENTS:

  • 1 tbsp extra virgin olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 lbs ground pork
  • 1 tbsp fish sauce
  • 1 tbsp vinegar
  • 1 tbsp Maggi liquid seasoning or soy sauce
  • 2 medium gold potatoes, peeled and cubed
  • 2 large carrots, peeled and cubed
  • 1 cup cubed red bell peppers
  • sea salt and ground black pepper to taste
  • 2 stalks green onions, sliced for garnish 
 

INSTRUCTIONS:

  • In a wide pan over medium heat, add olive oil.
  • Add onions and garlic, cook until lightly browned
  • Add ground pork, sea salt, ground black pepper and vinegar. Stir and then spread evenly into pan. Cover for 3 minutes.
  • Uncover and stir in the carrots and potatoes.
  • Spread fish sauce, maggi seasoning or soy sauce. Stir and then cover for 5 minutes, stir in between.
  • Add red bell peppers. Stir and continue to cook until potatoes and carrots are tender.
  • Add a pinch of sea salt, stir and serve.
  • Garnish with chopped green onions.
