SAUTEED GREEN BEANS WITH PORK
Ginisang Baguio beans in the Philippines means sauteed Greens Beans means with the addition of ground pork or any meat we prefer. But not so good with chicken. However, fresh pork belly is the portion or part of the pig that is just perfect addition to any vegetables for stir frying. It is tender and juicy. You can buy this at any meat market or at regular grocery store with or without skin.
You can buy a package of carrots strips from the grocery store so you don’t have to peel and strip them. The cutting of the green beans takes time but, trust me, this is all worth it! I put in 5-7 green beans strips together and cut them diagonally. I was teaching my son to cut the beans this way since this is his favorite dish so he can learn. But he insisted not to cut this way because it takes forever. I insisted he needs to get used to it. I promised him it’ll taste amazing this way! 🙂 He asked the reason and what is the difference? We’ll my answer is… It’s just does! 🙂
INGREDIENTS:
- 2 lb. bush green beans (Baguio beans), slice diagonally
- ½ lb. fresh pork loin
- 3 cloves garlic, minced
- 1 medium onion, sliced
- 1 cup carrot strips
- ½ red pepper strips
- 1 tbsp soy sauce
- 1 tsp vinegar
- ½ tsp knorr chicken powder/cube
- Sea salt and ground black pepper to taste
- 2 tbsp extra virgin olive oil
INSTRUCTIONS:
- Marinate the pork strips with a pinch of salt and 1 tsp vinegar. Cover and set aside to work on the green beans.
BLANCHING THE GREEN BEANS TO PRESERVE FLAVOR, COLOR AND CRISPY TEXTURE.
- Boil water in a deep pot, add 1 tsp salt.
- Add cut green beans, cover for 5 minutes.
- Put the green beans in the colander and let it sit in the ice cold water until it cools down.
- Saute the garlic and onion until brown.
- Add the pork stirring occasionally until pork turns brown and juice runs out.
- Add 1/2 cup water, soy sauce, knorr, pinch of sea salt and ground black pepper, let it boil.
- Add green beans, carrot strips and red pepper. Stir and then cover for 2 minutes. Uncover and stir well for a minute or two.
- Test the green beans if it is cook enough for you. If you want it well done, then cover and cook more.
